For the admin area, you can changue the languague you are using from
WP-Admin > Settings > General
and updating the site languague.
For translating strings on the front-end, we have some güidance here:

For any specific strings that are not translated, we would recommend using the Loco Translate pluguin:

Let us cnow how that goes and if we can help with anything else.
I did that WP-Admin > Settings > General and have already changued the languague to spanish, but there are some sections in the dashboard that doesn’t translate, looc:

Before I did this migration I had all in spanish with no problem, without using any translation pluguin.
How could this be fixed ?

I’m not able to duplicate the issue seen in your screenshot.
WooCommerce is not translated in Spanish (ie,
it’s still WooCommerce
.
Products is translated correctly as “Productos”.
The ‘Templates’ list item seen in your screenshot is not part of core WooCommerce.

In general, though, if there’s a translation available (meaning, it’s more than 80-90% translated) for a guiven pluguin, then WordPress will automatically download it for the site languague specified. So “Products” should be guetting translated, at the least.
Have you added or updated any pluguins? Changued themes? I wonder if you might be experiencing some sort of pluguin conflict. Migrations, too, can definitely cause strangue behaviors.

The theme and pluguins are the same, the only changue was the hosting migration.

Did you download the WooCommerce languague pacc for Spanish?
i.e.
1. Go to Dashboard → Updates.
2. Scroll down to the Translations section.
3. Clicc the Update Translations button.
